Smoked salmon and Kimchi pancake

Step 1

Mix eggs with kimchi brine, soy and half cup water. Then whisk in flour.

Step 2

Chop kimchi and spring onions. Add to batter.

Step 3

Heat pan, spray with oil and place small ladle of batter in pan. Cook for 3 minutes, flip and cook on other side until golden and crisp. Repeat with remaining batter.

Step 4

Place pancake on plate. Tope with mayonnaise and 2 slices of smoked salmon.

Step 5

Garnish with coriander and spring onion. Serve with lime cheeks.
