Prawn Laksa

METHOD

Step 1

Place rice noodles in a bowl and pour in boiling water for 5 minutes or until noodles are soft.

Step 2

Heat oil in a deep fry pan, add the laksa paste and a splash of coconut milk. Cook for 3-4 minutes, adding the remaining coconut milk and stock. Simmer for 2 minutes.

Step 3

Peel and devein the prawns, leaving the tails intact or remove if desired.

Step 4

Add the prawns and heat through.

Step 5

Put the noodles in bowls and ladle prawn soup in. Top with cucumber, bean sprouts and parsley.

Jar of laksa paste 1 tablespoon olive oil 300g cooked Tropic Co Australian Tiger Prawns
100g medium rice noodles
800ml coconut milk
1L chicken Stock
1 Cup beansprouts
½ cucumber
Small bunch of parsley
