Step 1

Pickle the carrot in vinegar and sugar in a small bowl.

Step 2

Heat a grill pan over high heat. Brush salmon patties lightly with oil and grill on both sides for 5 minutes until cooked.

200ml Kewpie mayonnaise

300g shredded carrot

80ml rice wine vinegar

20g sugar

2 Lebanese cucumbers, peeled in ribbons
